This is just a really great, inexpensive cool climate sauvignon blanc from Redbank Winery in The King Valley. Light and bright with lifted aromas of tropical fruits and citrus lemon zest, with just an herbaceous note of freshly cut grass, green mango and fresh herbs, the palate is fresh and vibrant with generous green tropical flavours of lychee, lemongrass, paw paw, gooseberry, and guava, balanced by a chalky citrus acidity. The back of the palate creates an acid backbone that follows to a fleshy mineral and passionfruit finish. Serve with prawns and green mango salad, a chickpea and zucchini kofta with minty yoghurt dip, or your favourite Pad Thai.
