This 16yo single malt Irish whisky from Bushmills is triple distilled, and because it is aged in three different kinds of oak barrels, the resultant dram is flavourful and complex. With aromas of vanilla, liquorice, dark chocolate and caramel, along with hints of sherry with sweet red berries, the palate is smooth and sweet in the front with vanilla and sherry flavours evident, whilst toasty, woody characters continue to define the palate, along with the taste of almonds. The mid-palate unfolds beautifully to where there’s a high level of complexity melding those notes of oak, cinnamon and spice, with grape jam and milk chocolate. The fruity notes allow the finish of port and sherry flavours to linger with just the right amount of spice and tannin. With a long finish, i’d be remiss to suggest serving this any other way but neat!
